Long car drives need frequent pullovers just to give students time to move about and break up the boredom. Keep a disposable camera in the glove box of your church van, and create an on-going game so that whenever a student spots a business, street, or memorial with her name on it (first or last), the van will pull over so that you can take a picture of the student next to her name (e.g., Smith's Auto Repair, Lisa Lane, etc.).
See if you can find a photo op for each member of your group, and keep a running list of these on the youth Web site or office bulletin board. (One year we drove across a "memorial" bridge that shared its name with one of our youth volunteers who couldn't make it that trip; we pulled over and took a photo with the whole group pretending to cry near the sign--yeah, it's a bit on the dark side of humor, but he loved the photo and actually framed it!)
